"Le Cailleret" is a Puligny Montrachet Premier Cru, the favorite white wine of the owner of Domaine de Montille. It gives us a delicate bouquet with floral scents, hints of citrus, aromas of ripe white fleshed fruits, nuances of honey and small pastry. A Chardonnay rich, deep and persistent that requires a long aging time in the bottle to release at best all its potential.

Puligny-Montrachet Premier Cru "Le Cailleret" is one of Domaine de Montille's most famous labels. It is a pure Chardonnay of rare elegance, finesse and complexity, born in one of the world's most vocated terroirs for the production of great whites. In fact, the communal territory of Puligny-Montrachet is home to no less than 17 Climat classified Premier Cru and 4 Grand Cru. The vineyard is located at an altitude between 230 and 320 meters above sea level, with a splendid and sunny east- and southeast-facing exposure. Soils composed of limestone or limestone-clay marls are perfect for the highest quality of viticulture, based on high planting density and low yields.
Premier Cru "Le Cailleret" Puligny-Montrachet is the fruit of the ancient savoir-faire of Domaine de Montille, which has been present in Volnay since the mid-18th century. Today it manages an estate of 20 hectares, with parcels in both Côte de Beaune and Côte de Nuits, almost all of which are classified Premier and Grand Cru. The vineyards have been managed under organic farming since 1995 and biodynamically since 2005. All the wines are Ecocert Bio certified. The Premier Cru "Le Cailleret" is the fruit of a small parcel located halfway up the hillside, on the northward extension of Montrachet, at the same altitude as Chevalier-Montrachet. It owes its name to the presence of a stony, pebble-rich soil. Harvesting is done by hand and the grapes are gently pressed. The flower must ferments in 600-liter barrels and 228-liter barriques. The wine ages for about a year in lightly toasted Allier oak barrels, 5-20% of which are new, also undergoing malolactic fermentation. It rests a few months in steel tanks before bottling.
Domaine de Montille's Puligny-Montrachet Premier Cru "Le Cailleret" is an important white wine, requiring 4 to 8 years of bottle aging before expressing its full potential. It is the favorite white of Alix de Montille, owner of the Domaine. It is light yellow in color, taking on light golden hues the more it ages. The bouquet is delicate and elegant, with floral scents, hints of citrus, aromas of ripe white-fleshed fruit, nuances of honey and small pastries. On the palate it is broad and satisfying, rich and intense, marked by a long, deep and persistent sip, closing on pleasant refreshing sensations.
