This label is characterized by a winemaking process that respects the territory and the authenticity of the wine, using only indigenous yeasts and no fining. The color is bright ruby red while the aromas released recall red-fleshed fruit and fresh flowers. The sip is full, agile, tasty, fruity, and with a long finish.
The Rosso Cascina Fontana is configured as a sincere expression of an artisanal philosophy aimed at enhancing the intrinsic characteristics of the territory. In fact, Mario Fontana himself, now at the helm of the winery, claims to be proud to produce wines "that represent the true expression of our land and the signs of our culture." Cascina Fontana is located in Perno, a small hamlet of Monforte d'Alba, and consists of about 5 hectares of vineyards scattered in the heart of the Langhe, between the municipalities of Castiglione Falletto, La Morra, and Sinio. In this noble wine-growing context and with an absolutely natural approach, Mario cultivates the traditional Langhe grape varieties, namely Nebbiolo, Barbera, and Dolcetto.
Cascina Fontana Rosso is made from black grape varieties, grown on sandy soil with veins of calcareous marls. The bunches are hand-picked and only partially destemmed, and the must is then fermented with only indigenous yeasts in fiberglass tanks, with about 15 days of maceration on the skins. Throughout the entire winemaking process, the liquid undergoes neitherclarification nor filtration.
To the eye, the Rosso from the Piedmontese winery Cascina Fontana shows a beautiful bright ruby red hue. Fragrant and decisive, the olfactory panorama is characterized by aromas of ripe red fruit that meet herbal and floral hints. The sip is agile, rich, and broad, with a very long finish that lingers on fruity sensations consistent with the nose. An accessible label, but not lacking in character and personality. The recommendation is to pair Rosso Cascina Fontana with tasty platters of cured meats and medium-aged cheeses, or with varied preparations based on white and red meats.
