The red wine from Cascina Tavijn is an expression of ancient charm and very traditional. The Cascina Tavijn cultivates Slarina grapes, once also known by the names Cellerina, Cinerina, or in the dialectal variant Slaréna, it is a forgotten grape variety native to Monferrato. Despite its remarkable resistance and great potential, this variety has slowly disappeared in recent decades due to the low productivity of the grapes in must. The few producers in the area who have maintained this variety have often used it in combination with Barbera, given the difficulty of vinifying it in purity. Today Nadia Verrua, a brilliant and courageous winemaker and owner of Cascina Tavijn, has decided to rediscover it, offering a very convincing interpretation with good expressive intensity.

The Tavijn wine is born from old vines cultivated on a limestone soil at 320 meters above sea level. All operations in the vineyard respect a traditional philosophy, limiting the use of copper and sulfur to a minimum and categorically avoiding any synthetic chemical products. The vinification is carried out in steel tanks with spontaneous fermentation triggered by only indigenous yeasts. The bottles are then marketed with different labels designed by children. These graphic designs with a naive and unconventional style emphasize the indomitable and archetypal soul of this grape variety that risked being forgotten forever.

This red wine from Tavijn presents all the typical and unique characteristics: very intense and bright ruby color, aromas of ripe fruit and wild spices, and an expressive and well-structured taste. The sip is dynamic, dry, pleasant, and balanced, with lively but subtle tannins and a good taste-olfactory persistence. It lends itself to multiple pairings, including local cured meats and salami, beef tartare, and first courses based on meat or vegetables. This bottle with a convivial and informal soul will be able to express all the flavor of tradition, showing a beautiful glimpse of the ancient roots of Monferrato.
