Roussanne from the French cellar Chemins de Bassac is a territorial and lively white wine perfect for livening up aperitifs with friends. Chemins de Bassac is a winery whose ultimate goal is to create wines that reflect the varietals used and the terroir from which they come. The love for this territory is also underlined by the label of this Roussanne, created by a local artist: natural elements recovered from the vineyards are placed on photosensitive paper to recreate the effect of ancient cyanotypes. Chemins de Bassac makes this Roussanne with grapes from its own vines that are about 30 years old, grown under a biodynamic system on alluvial terraces characterised by limestone and clay soil. The plots are situated at an altitude of 100 metres above sea level, within a wonderful panorama created by the mountains in the back and the Mediterranean Sea in front of them. The grapes are harvested manually when fully ripe and softly pressed. A cold static decantation is carried out to clarify the must before spontaneous fermentation using only indigenous yeasts in fiberglass. The wine then rests in cement vats for a period of 5 months on the fine lees. In the cellar, the temperature is scrupulously controlled to avoid the onset of excessive and harmful volatiles. Bottling is done by gravity, without any clarification or stabilisation, following the lunar calendar.
Chemins de Bassac's Roussanne presents itself to the eye laden with its golden yellow colour, which is synonymous with beautiful ripeness of the fruit and assumes a certain consistency on the palate. The aromas are intense and reminiscent of the summer season with notes of melon and ripe yellow-fleshed fruit. Generous effluvia of honeysuckle calls to mind the floral world and enriches this odorous sweetness with subtle vegetal notes. In the mouth, the expectation of a rather rounded taste is confirmed, however, accompanied by a mineral lash and excellent freshness. The ideal accompaniment is finger-food on the terrace, or country terrine or crab cake: but always share it among friends!
