Organic and biodynamic"Combe des Roches" from Domaine la Soufrandiere is a Chardonnay from vines that grow on soils rich in marl and clay. The grapes are hand-harvested, undergo alcoholic fermentation with indigenous yeasts, followed by malolactic fermentation and aging that mainly occurs in steel and partly in wood. Complex is one of the best terms to describe it, along with well-structured and rich in fragrant aromas, such as peach and notes of toasted nuts.
The Domaine La Soufrandiere ‘Combe des Roches’ Saint-Véran is characterized as a rich and complex interpretation of this Burgundy AOC. The Domaine was founded in 1947 by the grandfather of the current owners, brothers Jean-Philippe and Jean-Guillaume Bret, who in 2001 launched the négociant project “Bret Brothers”. The winery manages 12 hectares of vineyards, distributed across some of the best appellations of the Mâconnais, embracing organic and biodynamic farming, certified since 2006. “Combe” is a French term referring to a particularly narrow and elongated valley, while “des roches” means “of the rocks”. In fact, the plot of about 1.5 hectares from which the grapes come, purchased by the family in 2016, is located at the foot of the Vergisson Rock, a limestone peak nearly 500 meters high.
The Saint-Véran ‘Combe des Roches’ from Domaine La Soufrandiere is made exclusively from Chardonnay grapes, grown at an altitude of 250 meters on soils composed of clay and marl, rich in limestone. The vineyards, facing north, are certified organic and biodynamic and are about 20 years old. In the winery, white winemaking takes place partly in steel and partly in wooden barrels, with alcoholic fermentation carried out by indigenous yeasts only and complete malolactic fermentation. Aging lasts for a few months in wooden barrels and precedes bottling done without prior clarification.
In the glass, the ‘Combe des Roches’ Domaine La Soufrandiere Saint-Véran reveals a bright golden yellow color. Aromas of exotic fruit, peach, and juicy pear describe the nose along with fragrant notes of dried fruit. The tasting is round, structured, and complex, with a lively fresh-salty push that anticipates the buttery finish.
