The philosophy of the winery has always been oriented towards environmental respect and since 2000 the entire estate has been cultivated following the principles of organic and biodynamic agriculture. In the vineyards, no herbicides or chemical pesticides are used, only sulfur, copper, and natural preparations, such as herbal teas or decoctions of herbs, aimed at strengthening the natural defenses of the vine. A choice made to enhance the varietal aromas of the grapes and the characteristics of the terroir. The yields in the vineyard are kept low and do not exceed 40 hl/ha, in order to obtain few clusters per plant of high quality.

Since 2016, the estate has also been able to count on another 5 hectares of vineyards, also certified organic, in the territories of Saint-Véran La Bonnode, Pouilly-Fuissé Les Chatenays, Pouilly-Fuissé Les Vigneraies and Vergisson.
