The Saint-Véran ‘Bonnode - Ovoide’ from Domaine La Soufrandiere represents a skilled interpretation in uniting dynamism and character. This family-run estate is located within the wine region of Mâconnais, which in turn is situated in the south of Burgundy. The management of the vineyards respects the principles of organic and biodynamic agriculture, and the winery can also boast two certifications. In fact, for the Domaine, preserving the environment, the soil, and the organisms that inhabit it is the only way to create balanced wines that reflect their terroir of origin. This label is a version of the climat ‘La Bonnode’ vinified in oval cement containers, without the addition of sulfur, hence the name “Bonnode - Ovoide”.

Domaine La Soufrandiere Saint-Véran ‘Bonnode - Ovoide’ comes from only Chardonnay grapes sourced from the Bonnode parcel, certified organic and biodynamic. After manual harvesting, the grapes are gently pressed whole in a gentle manner and the resulting must is vinified in 19-hectoliter oval cement containers. The alcoholic fermentation is carried out by indigenous yeasts only and, initially, the mass matures for a year in the same wine vessels, before being transferred to steel tanks where it rests for a few months on the fine lees before bottling. Throughout the entire processing, the liquid undergoes no clarifications, filtrations, or additions of sulfur.

In appearance, the Domaine La Soufrandiere ‘Bonnode - Ovoide’ Saint-Véran shows a straw-yellow color with golden reflections. On the nose, it is vibrant and fine, with hints of fresh summer fruit, citrus, white flowers, and dried fruit. Full-bodied and concentrated the taste, animated by lively freshness that makes the development balanced and clean.
