The “Ronco delle Mele” Sauvignon Magnum is born in the Tenuta Venica, which has a total area of about 40 hectares divided into different plots located within the Collio territory. The mild and always ventilated climate and the soils composed of calcareous marls and ancient marine sandstones create an ideal habitat for the white grape varieties. The label takes its name from the homonymous vineyard, which is located on a particularly suited hill, but which had suffered damage and some landslides as a result of the bombings that occurred during World War I. To stabilize the soil, Daniele Venica decided to also plant apple trees, which have become the symbol of the vineyard and contribute to enriching environmental biodiversity. Harvesting takes place around mid-September and the grapes undergo a prefermentative maceration of 20 hours at a temperature of 11-12 °C, in protection from oxygen. After soft pressing, the must ferments partly in steel tanks and partly in large wooden barrels of 20-27 hectoliters. Before bottling, it ages in the same containers on the fine lees for about 6-8 months.
