The Savigny-lès-Beaune 'Les Godeaux' from Maison Romane comes from old vines in a northern climat of the village. As is customary for this winery, the wine ferments spontaneously and ages in old barrels, an approach that shows great respect for the raw material. It discreetly expresses the measured character of Savigny, with an olfactory profile oriented towards small red fruits and notes of undergrowth and violet, and with a fresh taste and subtle but palpable structure. The minerality of the terroir is directly apparent, a typical and ideal trait for a rabbit stew with mustard and thyme
