Cascina degli Ulivi - Bellotti's 'Semplicemente Vino Bianco' is an expression of purely artisanal spirit capable of surprising for its genuineness and immediacy. It was in 1977 when Stefano Bellotti, who passed away in 2018, founded his winery in the Alessandria town of Novi Ligure and soon became a reference point for biodynamic viticulture in Italy. Among the rows of vines on the estate, local varieties such as Cortese, the winery's main white grape variety, grow in balance and in harmony with the ecosystem.
Cascina degli Ulivi - Bellotti 'Simply White Wine' comes from a white grape cultivated according to the dictates of biodynamics on different plots, characterised by partly clay-limestone and partly clay-ferrous soils. Harvesting is carried out by hand in September and, after gentle pressing, the must undergoes spontaneous alcoholic fermentation in large 110-hectolitre oak casks using only indigenous yeasts, with malolactic fermentation also taking place completely. Throughout the process, the liquid undergoes no filtration and no addition of sulphites, with the utmost respect for the truest expression of terroir.
