The Metodo Classico Brut of Villa Sparina is a Blanc de Blancs that surprises with the extraordinary versatility of the Cortese grape. A grape that proves to be very suitable for the production of excellent quality Spumanti. The vineyards of Cortese and Chardonnay are cultivated on calcareous-clay soils, on hilly areas with sunny southern and southwestern exposure. The harvest takes place with a slight advance, in order to preserve the maximum freshness. At the end of the gentle pressing, the must ferments in stainless steel tanks at a controlled temperature of 18° C. After blending, the second fermentation takes place in the bottle according to the Metodo Classico, with a sur lattes aging of 36 months before proceeding to disgorgement.
