The Spumante Brut 'One&Only' of Ribolla Gialla is produced using the Martinotti method, which allows the fragrance of the grape's aromas and scents to remain intact. Ribolla Gialla is a grape variety very suitable for sparkling wine production due to its natural freshness, low alcohol content, and its delicacy. At the end of the classic white vinification, the sparkling base is transferred to an autoclave for the second fermentation and a long Charmat process. In the glass, it presents a straw yellow color with slight greenish reflections. The bouquet expresses scents of orange blossom, white flowers, citrus aromas, lime, apple, white-fleshed fruit, and aromatic herbs. The sip is tense and lively, with delicate fruit and a finish of vibrant citrus freshness.
