"Ecologico 3" is a red wine of marked freshness that is briefly aged in steel. An extract of Spain with all its Mediterranean nuances, with aromas of cherry, sour cherry, berries, and light peppery sensations. The sip is balanced and agile, with great drinkability.

The Red ‘Joven Ecologico 3’ Toro from the Montetoro line of Ramón Ramos is configured as an accessible and easy-to-read Spanish red wine, capable of showcasing the most immediate face of the Toro denomination. Located in the region of Castile and León, in the northwestern part of Spain, the DO of Toro is based on Tempranillo, locally called Tinta de Toro, a grape variety that alone represents a remarkable 95% of the entire vineyard area of the denomination. The climate in the area is continental, with hot, dry summers followed by cold winters, while the altitudes are quite high as the vineyards sit on the plateau that divides the mountain ranges of the Cordillera Cantabrica and the Sistema Central.

‘Joven Ecologico 3’ Montetoro Rosso Toro is a pure Tinta de Toro from vineyards aged between 20 and 30 years, trained as bush vines on very poor soils characterized by an abundant presence of sand and stones. Following manual harvesting and careful selection of the bunches, the alcoholic fermentation of the must takes place at contact with the skins in temperature-controlled stainless steel tanks, the same type of winemaking containers where the mass remains to mature for several months. Following a further brief resting in glass, the wine is finally ready for market release.

The color of the Montetoro Rosso ‘Joven Ecologico 3’ Toro from the Ramón Ramos winery is ruby red with violet hues. On the nose, one can perceive hints of red flowers and small ripe fruits such as blackberry and cherry, combined with light vegetal notes. On the palate, it is fresh, juicy, and balanced, with a tannic structure that is not overpowering, leading to a fragrant fruity finish. Due to its organoleptic characteristics, this Toro Rosso represents the ideal pairing with white meats or platters of cured meats and medium-aged cheeses.
