Touraine "Brin de Chevre" from the French winery Clos du Tue Boeuf is a white wine that combines minerality and creaminess to perfection. This label is made from pure Arbois grapes harvested by hand and vinified with only indigenous yeasts, while the wine is aged in wooden barrels for 12 months. The straw yellow colour with greenish highlights introduces aromas of yellow-fleshed fruit and white flowers. The taste is agile, fresh, balanced and slightly sapid. 

The Touraine ‘Brin de Chevre’ represents a fine, graceful, and balanced interpretation expertly crafted by the French winery Clos du Tue Boeuf. This artisanal production reality, managed by brothers Jean-Marie and Thierry Puzelat, is located in the small municipality of Les Montils, in the Loire, straddling the areas of Touraine and Cheverny. For the two brothers, the winemaker must act as an intermediary between the land and the wine glass, imprinting the character of the place and the vintage. In this perspective, the operations in the field follow the rules of certified organic farming while in the winery any artificial input is avoided, except for small doses of sulfur when the wine requires it.

‘Brin de Chevre’ Touraine Clos du Tue Boeuf is produced solely from Arbois, an indigenous white grape variety also known as Menu Pineau. The rows, cultivated according to the principles of organic farming, are partly aged between 65 and 80 years and are planted on soils made up of clay, sand, gravel, and flint. The harvest is carried out entirely by hand with a rigorous selection of the bunches and the grapes are then gently pressed. Subsequently, the alcoholic fermentation of the must takes place in wooden barrels thanks to the sole intervention of indigenous yeasts, with maturation occurring in Burgundy oak barrels and demi-muids for about 12 months. Once the aging process is complete, the wine is bottled without undergoing any filtration.

Clos du Tue Boeuf Touraine ‘Brin de Chevre’ is straw yellow with greenish reflections. On the nose, fine and articulated notes of citrus, white flowers, and yellow-fleshed fruit alternate, reached by mineral puffs. Balanced and coherent on the palate, with excellent freshness and a mineral stamp that lingers long.
