The Valpolicella Ripasso Superiore Cesari is a red wine born from years of experience and tradition, and a great expression of the terroir in which it originates. The wine macerates for a few weeks in contact with Amarone pomace, acquiring color, tannins, and structure, and then ages in wood and in bottle. Juicy, rich, and soft, the nose highlights notes of red fruits, cherry, and delicate spicy nuances. Perfect for a winter dinner among friends!

The Valpolicella Superiore Ripasso is a label with a rich and sweet aromatic profile, produced by the important Venetian winery Cesari. This wine expresses all the winemaking mastery of the estate, being made through the peculiar technique of ripasso, which involves the maceration of Valpolicella on the precious fermented pomace of Amarone. Through this practice, the wine acquires additional color, structure, and organoleptic complexity, effectively placing it halfway between the dynamism of a Valpolicella and the generosity of an Amarone.

Valpolicella Ripasso Superiore Cesari originates from a blend of 75% Corvina Veronese, 20% Rondinella, and 5% Negrara and Rossignola, varieties grown in hillside vineyards exposed to the south. Following the classic red winemaking through alcoholic fermentation in contact with the skins and a brief resting period, in January the Valpolicella is put to macerate for 15-18 days on the dried pomace of Amarone. Once the racking is done and the malolactic fermentation is completed, the wine is placed to mature in wooden barrels for several months until the final bottling.

In visual examination, the Valpolicella Ripasso Superiore from the Cesari winery shows a ruby red color with purple hues. The aromatic spectrum is defined by vivid sensations of cherry and other ripe red fruits, accompanied by inviting hints of sweet spices. The sip, soft and medium-bodied, is characterized by juicy freshness and fine tannins that contribute to the overall drinkability. Tasty fruity perceptions define the tasting closure. The producer's recommendation is to serve this Ripasso at room temperature paired with grilled or stewed meats.
