"We owe to the small company of the Vodopivec brothers some of the most exciting versions ever tasted of the most important white wine of Carso, the Vitovska". Thus begins the review of the Wine Guide of Italy by L'Espresso dedicated to Vodopivec, highlighting the absolute prominence of this winery located between the Italian and Slovenian Carso, in one of the most harsh and challenging territories of the North-East where the intensity of the Bora lashes the vines and the rock becomes the absolute metaphor of the straightforwardness of this ecosystem.
The first and only love of the Vodopivec brothers is the Vitovska, in accordance with a precise mono-varietal choice that rewards the deep vocation of this indigenous grape variety of Carso cultivated in a small strip of land by a very limited number of producers. For the Vodopivec brothers, transforming the Vitovska into an authentic wine is a rigorous task that does not allow shortcuts: no more than ten thousand plants per hectare, no more than half a kilogram of grapes per plant, no use of fertilizers, insecticides or fungicides, and production only in the best vintages, according to a philosophy that recognizes the balanceinherent in nature and conceives agricultural activity not as interference but as listening to the language of the earth and genuine interpretation of it.
All of this is associated with cellar practices capable of supporting the natural aromatic thrust of the grapes and preparing the obtained wine for long evolutions over time: as in tradition, every process takes place in large Slavonian oak barrels where the must remains in contact with the skins and draws substance and structure from them. After almost 7 years, the Vitovska by Vodopivec is ready to express itself in all its fullness: and after this long journey, of this "red dressed in white" emerges above all the expressive uniqueness, which transforms every tasting into a privileged encounter with the pride of Carso. For this reason, the Vitovska by Vodopivec is an anthem to the land, as well as a testament to the wonderful symbiosis between wine and the passage of time.
