The Aldo Viola winery is a family-run business located in the town of Alcamo. Here, in the province of Trapani, one of the best winemaking areas in Sicily, the Viola family has been preserving knowledge and traditions for four generations. Nowadays it is Aldo, a young man who grew up in the world of wine, who manages the company. At the age of 20, he decided to leave Sicily to gain experience in various countries around Europe. After his final stop in Denmark, he returned to the family winery, with clear ideas about which vineyards to buy and which wines to start producing. Aldo is in fact a 'one man show', taking care of every stage of the process, from planting the vines to sales, while always keeping three fundamental principles in mind: excellence, tradition and eco-sustainability. The Aldo Viola winery is characterised by its very naturalistic approach, which aims to produce a range of wines in which each sip conveys the beauty of Trapani's terroir.

The vineyards owned by the Aldo Viola winery cover an area of around 16 hectares in the fertile province of Trapani, in the area known as Feudo Guarini. Among the rows of vines, typical local varieties are grown, such as Nero d'Avola, Syrah, Grillo, Catarratto, Nerello Macalese and Perricone. Each variety is grown according to eco-sustainable principles, and the processes follow organic farming standards, resulting in rich, fragrant grapes. In the cellar, fermentation takes place using indigenous yeasts, and malolactic fermentation takes place naturally, guaranteeing better microbiological stability. Sulphites are practically reduced to zero and, at the time of bottling, no filtration is carried out, thus keeping all the natural qualities of each individual type intact.

Each year Aldo Viola produces a limited number of niche wines, amounting to just over 10,000 bottles, which are divided into seven white and red varieties. These wines are the fruit of his fiery, charismatic and overwhelming spirit, absorbing the energy of the land and transforming it into unique aromas and flavours.
