After graduating from Classical High School and studying Political Science and a brief career in the world of fashion and a cameo in the world of politics, since 2014 Adriano Moretti, owner of the Bajaj winery, has set himself the goal of transmitting through his wines the essence of the Roero, a territory he cultivates with love and passion. In order to be able to express the character of the area, without filters or alterations, the winery embraces the so-called 'subtractive' philosophy, which consists in excluding all those agronomic and oenological practices that are not necessary for the production of a great wine, but rather homologating. Alongside viticulture, the estate dedicates itself to the cultivation of 16 hectares of hazelnuts and vegetables, from which it obtains products such as jams, compotes and other typical local products.

The approximately 5 hectares of vineyards planted by the Bajaj winery enjoy favourable locations and a certain age, ranging from 10 to a good 70 years. The varieties cultivated include the local Nebbiolo, Barbera, Arneis and Favorita, spread over three different MgAs (Menzioni Geografiche Aggiuntive) of Monteu Roero: Gaiuccio, Bric Nota and San Vincenzo. Gaiuccio is the largest parcel of the estate, where the soils are made up of white sand rich in limestone. Within the Additional Geographical Mention of Bric Nota are the oldest vines, which benefit from the considerable slopes, the friable nature of the soil and the high planting density, ideal conditions for obtaining great red wines. Finally, the San Vincenzo plot contains a vineyard dedicated exclusively to the production of a Metodo Classico sparkling wine made from Barbera, consisting of young vines and difficult soil. The approach adopted by the estate is sustainable, "without excesses and without extremism", based on the principles of guided winemaking and the so-called "subtractive" philosophy, which envisages the exclusion of filtrations, the use of clarifications of only natural origin, no use of invasive additives and predominantly spontaneous fermentation.

This is the origin of Bajaj's white, rosé and red wines, characterised by fine typicality and genuineness. The name of this Monteu Roero winery derives from the dialect word 'bajé', meaning 'yawning', 'dozing'. This was the nickname of the maternal family of Giovanni, Adriano's father, as they were quiet people who worked hard and honestly.
