In the Vittoria area, in the province of Ragusa, from the enthusiasm of three young friends determined to bring a breath of fresh air to the territory, the wine estate COS was born in 1980. Giambattista Cilia, Giusto Occhipinti, and Cirino Strano decided to name the estate by combining the initials of their surnames. Initially, the three rented the old family cellar and the adjacent vineyard from Giambattista's father, producing just 1,470 bottles in their first vintage. Over the following years, the estate expanded, contributing to the enhancement of the Cerasuolo di Vittoria, the first and still the only Sicilian DOCG. The winery's production style aims to offer the purest and most untainted expression of the area, a goal pursued by embracing biodynamics and adopting a handcrafted winemaking approach.
In this pedoclimatic context, the vineyards, located 250 meters above sea level and surrounded by olive, almond, and carob trees, are cultivated according to the principles of biodynamics. The cultivated varieties include the indigenous Frappato, Nero d’Avola, Zibibbo, Grecanico, and Inzolia, alongside a smaller percentage of the international grape varieties Cabernet Sauvignon and Merlot. In the winery, for the winemaking and aging phases, concrete tanks and oak barrels are used, as well as terracotta amphorae intended for the 'Pithos' line, which takes its name from the characteristic jars used in the processing. The use of amphorae allows for the production of wine that is not contaminated by wood, a true expression of the territory of origin.
The selection of the COS winery is quite broad and diversified, including reds, whites, intense Cerasuolo di Vittoria, and orange wine, as well as a passito and a Classic Method Rosé sparkling wine made solely from Frappato grapes. These are authentic and Mediterranean interpretations capable of reflecting the character of the terroir behind them.
