Domaine Ami
The estate is therefore based on two essential cornerstones: a cultivation of the vines that follows the principles of organic farming and very simple vinifications, inspired by the practices used to make natural wines, without resorting to any enological additives. The end goal is to produce wines with a straightforward and direct character, capable of faithfully reflecting the grape variety and the terroir. The consistency and seriousness have led planting, in order to create competition among the plants and a contained and excellent quality production. The vineyard, in fact, constitutes their small kingdom and the true wealth of the estate. It is clear to the two winemakers that only starting from excellent grapes can great wines be produced. Thanks to established relationships with other small winemakers in the area, Willy and Paul also purchase grapes from prized parcels, which they vinify to create a range of labels from legendary places in Burgundy, such as: Pommard, Saint Romain, Volnay, or Beaune, which enrich their label offerings.
