The Peixes winery represents one of the winemaking gems of Galicia, of which it is the viticultural spokesperson. The project was born in 2017 out of the enthusiasm of Jesús Olivares and Curro Bareño, the same Madrilenian winemakers at the helm of another prominent winery in the area, Fedellos do Couto. The two producers identified the vicinity of the small mountainous concello (a Galician word identifying a municipality) of Viana do Bolo, in the southeast of the region, as the ideal place for growing vines. As easily guessed, the Galician word "Peixes" translates to "fish."

The 6 hectares of vineyards cultivated by the winery are among the highest elevations in all of Galicia, ranging from 600 to 850 meters above sea level. The climate, oceanic with a continental influence, is characterized by significant temperature swings between day and night that result in a great accumulation of aromatic precursors, as well as a remarkable freshness of the finished wines. Instead, in terms of the pedological aspect, the soils are granitic with a high content of orange quartz. In this peculiar environmental context, which was once considered prohibitive for viticulture, Jesús and Curro raise traditional Galician varieties, namely Mencia, Mouraton, Grao Negro, Garnacha Tintorera, Bastardo and Souson for red grapes and Godello, Doña Blanca, Colgadeira and Palomino for white grapes. The agronomic vision embraces sustainable and organic farming while winemaking practices include gentle crushing of whole clusters, spontaneous fermentations conducted at low temperatures, prolonged maceration on the skins and maturation in neutral barrels. In order not to deprive the wines of their natural characteristics, bottling takes place without clarification or filtration.

The few labels offered by Peixes are all red wines, also elaborated with the use of white varieties by resuming the ancient tradition of vinifying red and white grapes together. The common thread that unites the different bottles is that of olfactory finesse and fragrance, as well as juiciness and gracefulness of taste. Indeed, the producers' goal is to capture and convey the most elegant and harmonious character of the terroir they have made their own.
