Riffault Sebastien
The Domaine Sébastien Riffault is an artisanal reality located near Sury-en-Vau, in the territory of the Appellation Sancerre, internationally famous for producing whites of great elegance and finesse. The estate was created in the early 1900s and has managed to maintain a typically family-oriented face and a strong bond with the oldest traditions of the area. Currently, the estate covers a total area of about a dozen hectares, divided into numerous parcels. The vineyards are cultivated on sunny hillside exposures, which enjoy particularly favorable pedoclimatic conditions for the cultivation of white grape varieties, especially for Sauvignon Blanc, which has found in this area a true cradle in which to express itself at the highest quality levels.
The estate's philosophy has always been oriented towards sustainable and environmentally friendly viticulture. The agronomic management is carried out according to the principles of organic farming and biodynamic practices, using sulfur, copper,horn manure, horn silica, natural fertilizers, and other preparations made with herbal infusions. To keep the soil soft and avoid compaction from the passage of mechanical equipment, vineyard work is done with the help of two mares. The vineyards have an average age of over 50 years and are cultivated on steep slopes characterized by soils composed of Kimmeridgian limestone and sands and silex stones. The climate is typically continental, with significant temperature variations between sunny days and cold nights.
The harvest is carried out with extreme care, only when the grapes are perfectly ripe and express all their intensity and aromatic richness. Regarding cellar practices, Sébastien Riffault is inspired by a light enology, which involves very simple winemaking processes based on spontaneous fermentations using only indigenous yeasts. The wines mature in wooden barrels and are bottled according to the lunar calendar and without filtration or clarification. The range of the winery's labelsrepresents the territory very well and allows one to appreciate the intense and satisfying style of great whites
