Xose Lois Sebio's 'Wish' Viño de Encostas takes the form of a personal and sincere expression, capable of surprising with its balance and depth. The Viño de Encostas project was born in 2009 with the aim of making bottles that fully express the identity of the territory from which they come, in this case from As Penelas, an area on the edge of the Ribeiro area. This bottle represents a tribute to the legendary punk rock band The Cure, of which Xose is a fan. "Wish" means "desire," the desire that has driven this Galician winemaker to experiment over the years, resulting in this wine.

Viño de Encostas Xose Lois Sebio 'Wish' is made from a rich blend of Caiño Longo, Ferrol, Sezão, Bastardo and other native varieties. The grapes come from old vines, aged between 70 and 80 years, resting on soils composed of clay and shale located between 250 and 300 meters above sea level. After harvest, the grapes are transferred to the winery and pressed, with the must undergoing a one-week cold pre-fermentation maceration. Subsequent alcoholic fermentation takes place in temperature-controlled open stainless steel tanks, and then the mass is transferred to 500-liter oak barrels where malolactic fermentation finishes and remains for 14 months in aging.

Xose Lois Sebio 'Wish' Viño de Encostas has an intense purplish red color. The nose has floral aromas of violet and fruity hints of cherry, raspberry and blueberry, soon joined by mineral and delicately spicy notes. Broad and balanced on the palate, marked by considerable elegance and depth and tempered by decisive fresh-sappy verve and soft tannic texture. Long and intense the epilogue.
