Tenuta di Castellaro introduces the Bianco ‘Pomice’, an interpretation capable of reflecting the sunny and marine character of the beautiful Aeolian Islands, a volcanic archipelago located in the northeast of Sicily. This label takes its name from the white magmatic rock abundantly present in the vineyards, lighter and fresher than obsidian, characteristics that are found in the Bianco ‘Pomice’. It is the flagship white wine of Tenuta di Castellaro, released for the first time in 2008 and immediately became a staple for the winery.
The Bianco ‘Pomice’ of Tenuta di Castellaro is born from a blend of Malvasia delle Lipari (60%) and Carricante (40%), varieties grown in bush training on sandy and deep volcanic soils, particularly rich in microelements. The plants, cultivated under organic farming, benefit from the altitude of 350 meters above sea level and the characteristic ventilated Mediterranean climate. The harvest is done by hand with careful selection of the bunches, which are then transferred to the winery for soft pressing followed by 10-12 hours of static decantation. Subsequently, the mass of Malvasia delle Lipari ferments and matures in temperature-controlled stainless steel tanks while the Carricante is vinified and aged in third and fourth passage barriques, with 6 months of resting on the lees associated with periodic batonnage. After blending, the wine is bottled and left to refine for at least another 6 months before commercialization.
Tenuta di Castellaro ‘Pomice’ Bianco is straw yellow in color with gold-green reflections. The nose evokes pronounced floral and fruity notes combined with sensations of citrus and Mediterranean scrub, as well as intense briny mineral puffs. Harmonious and fresh is the entry on the palate, of excellent softness and dynamism, characterized by a decisive salty finish.
