CHAMPAGNE EXTRA BRUT 'LE TALUS DE SAINT PRIX' JEAUNAUX ROBIN DESCRIPTION

"Le Talus de Saint Prix" is a Champagne made by Maison Jeaunaux Robin with a blend based mainly on Pinot Meunier and a balance of Pinot Noir and Chardonnay. The majority of red grapes, gives a particular structure and intensity to the Champagne, also enhanced by a minimum aging period on the lees of 36 months. Fruity aromas and more evolved tertiary nuances find a perfect balance in a sip of lively mineral freshness.

Champagne Extra Brut "Le Talus de Saint Prix" is produced by the small family-owned Maison, based in the village of Talus-Saint-Prix, in the Vallée du Petit Morin, a border area between the Côte de Blancs and the Côte de Sézanne. This is a terroir with special characteristics. The soils are composed of limestone and clays, but have a rather high percentage of silica. The vineyards have an average age of between 35 and 40 years, are managed under organic farming methods and cover an area of 5 hectares, mainly planted with Meunier vines, with a few small parcels of Chardonnay and Pinot Noir. After manual harvesting, the grapes are soft-pressed and fermented with indigenous yeasts in stainless steel or concrete tanks and a small part in oak barrels more than 10 years old. The base wines only partially undergo malolactic fermentation before the final blend is created. The second fermentation takes place in the bottle according to the Champanoise method. Before dégorgement, the wine is aged on the lees for 36 months.

Champagne "Le Talus de Saint Prix" is an Extra Brut that expresses the character of an exceptional terroir, giving an intense sip with a distinct minerality. It is a perfect bottle to pair with shellfish or seafood appetizers. It is straw yellow in color, with a perlage of beautiful finesse and elegance. The olfactory profile expresses aromas of citrus, white fruit, dried fruit, pastry notes and a light spiciness. The sip is intense, aromatically rich and ripe, shot through with a crisp savory and mineral vein, closing with a vibrant freshness.
