The Chianti Classico "San Lorenzo" is the Gran Selezione of Castello di Ama come to life from the beautiful valley overlooked by the eighteenth century villas accompanied by vineyards exciting; the "San Lorenzo" is one of the leading products of the recent designation Chianti Classico Great Selection, a real top quality in the Tuscan wine scene. The "San Lorenzo" comes from Sangiovese, Merlot and Malvasia Nera, manually harvested between late September and early October from old vines that give a fully mature grape polyphenols. Castello di Ama follows the tradition; the "San Lorenzo" is fermented in stainless steel tanks for 21-23 days with frequent pumping and always plays here malolactic fermentation to increase its softness and its voluptuousness. The aging continues for 12 months in barrique in part of the first passage and in part and used for further 24 months in bottle. Thus was born the Chianti Classico Great Selection "San Lorenzo", one of the top wines of Castello di Ama that with the 2010 vintage came in sixth place in the ranking of the Top 100 Wine Spectator.
