The artisanal winery I Custodi delle Vigne dell’Etna presents the Etna Bianco Superiore ‘Caselle’, a label that stands out for its refined, tense, and mineral style, offering a glimpse of the extraordinary qualitative potential of Carricante. Specifically, the grapes come from the Contrada Caselle, a subzone within the municipality of Milo, located on the eastern slope of Etna. The name ‘Caselle’ is derived from Latin and means “rain”, chosen to represent the most distinctive feature of the Milo territory, one of the rainiest in all of Italy, with an average annual rainfall nearing 1,500 mm. It is the only municipality in the entire volcano area where it is permitted to produce an Etna Bianco Superiore, testifying to its exceptional suitability for white grapes, particularly Carricante.
‘Caselle’ Etna Bianco Superiore I Custodi delle Vigne dell’Etna is a 100% Carricante from vines about 10 years old on average, cultivated in a truly sustainable way, without the use of synthetic chemicals. The vines grow on subacidic volcanic soils, characterized by high presence of sand and mineral substances and located at a height of 900 meters above sea level. The grapes, hand-picked and carefully selected, are first subjected to a soft pressing of whole clusters, followed by spontaneous alcoholic fermentation of the must in temperature-controlled stainless steel tanks. The subsequent maturation period always takes place in steel and lasts for 18 months, followed by an additional 24 months of resting in the bottle before hitting the market.
The Etna Bianco Superiore ‘Caselle’ from the winery I Custodi delle Vigne dell’Etna has a straw yellow hue with brilliant greenish reflections. The nose offers deep and fine hints of almond, anise, broom flowers, elderflower, mown grass, and citrus honey. All supported by a iodized mineral stamp. On the palate, it is fresh and mineral, refined and balanced, with a savory, energetic, and lasting finish.
