"Georges" is a macerated white wine with a slight oxidative note that is produced in the Languedoc-Roussillon area. The nose shows a very intense and complex aromatic profile, composed of notes of dried fruit, citrus fruits, spices and aromatic herbs. It has a soft and multifaceted profile, with good aromaticity and appreciable oxidative nuances. To be paired with smoked fish, anchovies or blue cheeses

With “Georges”, La Cave Aux Fioles creates its orange wine, with predominantly oxidative characteristics. Carlos Badia does not hide that his greatest passions in winemaking are precisely these: macerations and oxidations, which find a natural outlet here, with a work carried out entirely in a spontaneous and original manner. The comic-style graphics of the label is pure fun, with winged corks fleeing from knights armed with corkscrews, while a barrel transports a sort of tipsy and vaguely Celtic Dionysus in flight, almost taken from one of Asterix's adventures.

“Georges” from the winery La Cave Aux Fioles is another of the white expressions crafted by the multifaceted winemaker Carlos. This creation consists of a blend of two typical varieties: the aromatic Malvoisie, which makes up the larger part with about 75% of the total, and Grenache Gris for the remaining part. The grapes come from old vines trained in bush form on clay-limestone soils, in the numerous parcels into which the small vineyard is divided, covering an area that does not exceeds 4 hectares. The climate they enjoy is distinctly Mediterranean, with humid sea breezes that mitigate the heat of the heights: the territory of Rivesaltes, symbol of the geographical and cultural region of the Catalan Countries, is one of the driest and sunniest areas in all of France. The harvest is carried out manually, at the moment of full ripeness of the fruits. The clusters transported to the winery are placed in maceration for 20 days and the must ferments together with the pomace in a spontaneous manner with only indigenous yeasts. Finally, pressing is done with a hand press. The aging lasts for a period of 6 months in French oak barrels and bottling is done by hand, without filtration or other invasive operations.

The color of the “Georges” made by La Cave Aux Fioles is immediately indicative of the type, presenting a rich golden yellow with dense amber hues. The aromas are intense, with hints of aromatic herbs in the foreground along with peculiar notes of dried fruit. A range of spices opens up subsequently and traces of volatile notes linger in the background, confirming a complex, original wine that needs to breathe for a long time. The oxidative notes characterize the tasting, which is certainly rich in aromaticity and also tonic, thanks to a lively and persistent freshness. A passionate orange that does not clash as an aperitif, as well as in accompaniment to smoked fish or cheeses
