The 'Giàrborina' wine is a Langhe Rosso that Elio Altare produces from Nebbiolo grapes, cultivated in old vineyards in La Morra, in a soil characterised by clayey and sandy marls facing south. In the vineyard, the approach is 'clean' as no synthetic chemicals, fertilisers or pesticides are used. The must ferments in steel rotary fermenters where the temperature is kept under control, macerating for 3-4 days. This is followed by the maturation phase, in which the wine is transferred to new oak barrels for 18 months. At the end of this refinement, the wine is bottled and put on the market.
