The Navarra Rosato 'Kale Katu' Biba Ardoak from the winery Bodegas Aristu represents a graceful and fragrant interpretation resulting from a genuine production philosophy. Bodegas Aristu was founded in 1995 in Lumbier by Juan Ramon Ollo Aristu, who immediately began cultivating the initial 10 hectares of vineyards organically. Today, it is his son Ibon who manages the current 30 hectares of vines using the same sustainable approach as his father, aiming to enhance the territory and the local winemaking tradition. In this sense, only traditional varieties such as Garnacha Tinta, Tempranillo, and, to a lesser extent, Garnacha Blanca are cultivated, while the winemaking approach involves minimal and never invasive interventions. The name 'Kale Katu' comes from the Basque language and literally means "street cat".

Biba Ardoak Rosato Navarra 'Kale Katu' from Bodegas Aristu originates from only Garnacha Tinta grapes grown according to the principles of certified organic farming at an altitude of nearly 500meters above sea level. Following the harvest, the grapes are vinified into rosato with about 24 hours of skin maceration in stainless steel tanks, where alcoholic fermentation occurs entirely spontaneously through the action of indigenous yeasts. Still in steel, the liquid matures for several months until bottling, which takes place without any clarification or filtration.

The 'Kale Katu' Bodegas Aristu Biba Ardoak Navarra Rosato presents itself with a coppery hue and brilliant reflections. The aromatic profile is characterized by sensations of cherry and berries that blend with delicate and fragrant hints of rose. On the palate, it is fresh and juicy, with a pleasant fruity finish.
