The Nebbiolo "Capisme-e" by Domenico Clerico is a red wine with a fresh and fragrant profile, obtained from the younger vines of the cru San Pietro, which expresses the varietal characteristics of young Nebbiolo very well, aged only in steel. The aromas are oriented towards delicate floral notes and aromas of cherry and small red berry fruits, accompanied by spicy and balsamic sensations. The taste is agile and fresh, with still crunchy fruit and a finish on savory notes.
The red Nebbiolo "Capisme-e" is the label of the winery of Domenico Clerico dedicated to the less demanding and more immediate expression of a great grape variety like Nebbiolo. For the production of "Capisme-e", the grapes from the youngest plants of the cru San Pietro are used, which have an average age of about 20 years and still produce with low yields of 42 hectoliters per hectare. The manual harvest takes place at the beginning of October and the grapes are brought immediately to the winery for fermentation using only indigenous yeasts and a short maceration on the skins, inso as not to extract too many tannins and to keep the wine on the fragrant aromas of the fruit. The same logic of preserving the characteristics of a quality raw material is applied to the aging, which takes place in steel tanks for a period of about 10 months.
The "Capisme-e" is the ideal bottle to understand the simpler and fruitier face of the great Piedmontese grape variety. The young vines, the delicate and low-extraction winemaking, and the choice not to use wood, enhance the fruit in its rich and pure essence. The color is bright ruby red. The bouquet is delicate, with fresh notes of red fruit, aromas of cherry, raspberry, small wild fruits, with spicy hints, herbal notes, and balsamic memories. On the palate, it has medium structure, with a pleasantly fruity taste, fine and elegant tannins, and a finish of great freshness and savoriness.
