"Nuit Blanche" is a white wine based on Macabeu from the northern area of French Catalonia. Aged in stainless steel, it expresses notes of yellow fruit, aromatic herbs, earth, and a pleasant saline nuance. A funky and pop label, with great straightforwardness and richness, featuring pleasant fresh and salty nuances.

La Cave Aux Fioles creates with “Nuit Blanche” its most pop label, graphically inspired by the 1968 swinging London. This expression of Macabeu in purity aims to be a sort of welcome in the cellar, an immediate white, to be drunk and not cerebral, but animated by the strength and complexity of the terroir from which it originates.

“Nuit Blanche” from Domaine La Cave Aux Fioles is a pure interpretation of Macabeu, coming from old bush-trained vines on calcareous soils and a layer of clayey matrix soil. The grapes come from one of the numerous parcels into which the property is divided, all of tiny dimensions. The vineyard is scattered over about 4 hectares, on the hills in the area of the Rivesaltes denomination, in Languedoc: the Mediterranean is right in front, interspersed with the salty marshes along the coast, and the climate is particularly dry and windy, mitigated by the humid sea breezes. The harvest takes place by hand at the moment of perfect ripeness of the bunches, transported to the cellar in small boxes. The pressing takes place using a small manual wooden press and the spontaneous fermentation is conducted thanks to the work of the only yeasts present on the skins, in a steel tank without temperature control. The aging takes place for several months in steel tanks and bottling is done by hand, without filtration, clarification, or stabilization processes.

“Nuit Blanche” from Cave Aux Fioles presents itself with an intense straw yellow color, reflecting the ripeness of the fruit and the warmth of the terroir. The nose is extremely expressive, with an opening of aromatic herbs from the Mediterranean scrub, a fruity extension on citrus notes and white pulp, and a finish with pronounced marine and earthy sensations together. The tasting is rich in fruity softness that then allows a dynamic freshness to emerge, while the finish shows a persistent saline verticality. A territorial white that absolutely calls for pairing with seafood dishes: crustaceans and shellfish with salicornia salad.
