The Pinot Grigio from Toros is born in the territory of Collio Friulano in the locality of Novali near Gorizia. The winery has a long history with family members dedicated to viticulture and eager to enhance the beauty of the territory, aimed at producing excellent whites. Today, Franco is the one who manages the activity: the current winemaker, but a vintner of the past, he has been able to make constructive changes, modernizing production techniques and taking care of the vineyard, respecting the growth and development times of the plants and the raw material. Today, the work in the winery is facilitated by the involvement of his daughters Eva, Cristina, and Erika, and his brother Renato, thanks to whom it is possible to continue looking towards the future of the work.
The vineyards of Pinot Grigio from Toros are located in the municipality of Cormons in a hilly area situated on the north-eastern border of Italy with Slovenia. The solar exposure is optimal between the rows and provides excellent ripening for the grapes at the time of harvest. The microclimate is ideal here: continuous ventilation, significant temperature variations, and the Prelati Giulie mountain range that protects the vineyards from cold northern winds are fundamental elements for perfect plant growth conditions. The soil here consists of layered marl and sandstone, eroded over time by weather agents, providing nutrients and minerals for a fertile and welcoming ground. The harvest is manual in the first days of September; in the winery, soft pressing occurs and alcoholic fermentation takes place in steel. It ages for 7 months always in steel.
The color of the Pinot Grigio di Toros is a straw yellow with brilliant reflections. The aromas evoke characteristic notes of toasted hazelnut, unripe yellow-fleshed fruit, and hay; on the palate, it is persistent, structured, elegant with good final freshness that invites sipping glass after glass. It is recommended to pair with seasonal vegetable soups, vegetarian dishes, grilled and roasted white meats, and mixed boiled meats.with sauces. Perfect for savoring at the family Sunday table to accompany moments of carefree joy, enjoying a wine typical of our tradition that evokes the authentic and genuine flavors of its land.
