Sapaio is the Bolgheri Rosso Superiore from Podere Sapaio, one of the most famous and highly rated wineries of this wonderful terroir on the Tuscan Coast. It is a classic Supertuscan inspired by the great wines of Bordeaux and made from a balanced blend of the most famous international red grape varieties: Cabernet Sauvignon, Cabernet Franc and Petit Verdot. The aromatic richness of high quality ripe grapes and long aging in noble woods result in a red wine of remarkable structure, intensity and persistence. Wild berry aromas blend admirably with evolving tertiary hints, giving a satisfying sip.
Podere Sapaio's Bolgheri Rosso Superiore Sapaio is a great wine, made by a winery that since the late 1990s has rapidly come to the attention of wine lovers with a range of high quality. The Cabernet Sauvignon, Cabernet Franc and Petit Verdot vines produce excellent grapes, thanks to a Mediterranean climate that is mild and always well ventilated by the constant presence of sea breezes. The soils are of medium texture, with limestone-clay components and the presence of sand veins and pebbles of alluvial nature. Harvests and subsequent vinification take place separately for each grape variety, following the different ripening times of the grapes. Fermentations take place partly in stainless steel tanks and partly in wooden vats with maceration on the skins for a few weeks. The wine ages for 18 months in French oak barrels and is aged for another 12 months in the bottle.
Sapaio wine, produced by Podere Sapaio, is a splendid version of Bolgheri Rosso Superiore. It is a ready-made label that can be tasted immediately, but can be stored for a long time in the cellar without any fear. At the table it goes particularly well with grilled red meats, roasts or spit-roasted game. To the eye it has a dark ruby color with garnet reflections. The olfactory picture is complex and intense, with aromas of black currant, blueberry, cherry, wild blackberry, hints of underbrush, humus, dried leaves and soft oriental spices. Rich and densely fruited, it has important but well ripe tannins, accompanying towards a suave and very persistent finish.
