The red wine Valpolicella "Cà Fiui" is born from well-exposed vineyards, yielding concentrated grapes that contribute to its distinctive character. Corvina, Corvinone, Rondinella, and Molinara combine in a blend where structure and finesse harmonize, providing a smooth and satisfying drinking experience. Corte Sant'Alda, a production reality where innovation, experimentation, and ecosystem awareness coexist at every stage of the production process, gives life to a bottle to be enjoyed immediately or kept in the cellar for a few more years to taste it in a more evolved version.
This "Cà Fiui" is a Valpolicella that arises from the blend of various native red berry varieties from the Veneto terroir: Corvina, Corvinone, Rondinella, and Molinara. The vines, cultivated in the Val di Mezzane, grow in vineyards about 350 meters above sea level, facing southeast, with a guyot training system. The rows are treated exclusively with organic and biodynamic practices. Once harvested, the grapes ferment in wooden vats thanks to the presence of indigenous yeasts, macerating on the skins for 15-20 days. Then comes the ageing phase, lasting 6-10 months in truncated cone-shaped oak vats.
The wine "Cà Fiui" is a Valpolicella that takes on a ruby red colour with reflections tending towards violet. Red fruit, spices, and hints of undergrowth are the olfactory notes that contribute to creating the profile of this label signed by Corte Sant'Alda. On the palate, it is light-bodied and balanced, with a delicate sip characterized by pleasant freshness and mild tannins. A Venetian red wine of excellent drinkability, which, among its many merits, also boasts great gastronomic versatility, making it the ideal companion for more or less formal lunches and dinners.
