WHITE WINE POMICE TENUTA DI CASTELLARO 2021 DESCRIPTION

Tenuta di Castellaro introduces Bianco 'Pomice', an interpretation that reflects the sunny, marine character of the beautiful Aeolian Islands, an archipelago of volcanic origin located in the north-east of Sicily. This label takes its name from the white coloured magmatic rock found abundantly in the vineyards, lighter and fresher than obsidian, characteristics found in Bianco 'Pomice'. This is Tenuta di Castellaro's flagship white wine, first released in 2008 and immediately becoming a staple for the winery.

Tenuta di Castellaro's Bianco 'Pomice' comes from a blend of Malvasia delle Lipari (60%) and Carricante (40%), varieties bred as small trees on deep, sandy soils of volcanic origin, particularly rich in microelements. The organically grown vines benefit from the altitude of 350 metres above sea level and the characteristic breezy Mediterranean climate. Harvesting is done by hand with careful sorting of the bunches, which are then transferred to the cellar for soft pressing followed by 10-12 hours of static decantation. Subsequently, the Malvasia delle Lipari mass ferments and matures in temperature-controlled stainless steel tanks while the Carricante is vinified and elevated in third and fourth passage barriques, with 6 months resting on the lees associated with periodic batonnage. After blending, the wine is bottled and left to age for at least another 6 months before release.

Tenuta di Castellaro 'Pomice' Bianco is straw yellow in colour with gold-green highlights. The nose evokes distinct floral and fruity scents combined with sensations of citrus and Mediterranean scrub, as well as intense salty mineral puffs. Harmonious and fresh on the palate, with excellent smoothness and dynamism, characterised by a decisive saline finish.
