Cresta Nova was created to give a voice to the sparkling wines of a region with an extraordinary talent for sparkling wine production. The mountains are not merely a backdrop but an active element in shaping the character of the wines. The altitude, the marked temperature variations between day and night, and the intense light create the ideal conditions for developing that aromatic tension and freshness which are the hallmark of every Cresta Nova label. A project born from the awareness of operating in one of Italy’s most renowned regions for the production of Metodo Classico sparkling wine: the Trento area.
Cresta Nova’s production method strictly adheres to the Metodo Classico protocol. Chardonnay and Pinot Noir are the key components of cuvées with a distinctive mountainous character, with particular focus on the Chardonnay, which makes up the entire composition of some of the Blanc de Blancs in the range. All wines are produced using soft pressing of the grapes and temperature-controlled fermentation, to extract freshness and aromas, creating a process focused on precision and expressive clarity.
In the glass, Cresta Nova sparkling wines reveal a refined and complex aromatic profile, typical of mountain wines: hints of yeast intertwine with more developed nuances that vary in intensity depending on the length of time spent on the lees. On the palate, the bubbles are always elegant and persistent, the mouthfeel taut and savoury, with a freshness that defines a precise and distinct character. The range spans from more immediate and dynamic interpretations—easy-drinking and direct—to reserves of great complexity, where long ageing imparts depth and creaminess.
