This is the first label in the winery's artisanal line, and its name is a play on words between the Basque phrase "sustrai berri," which stands for "new roots," and the English word "berry," in reference to the wine's aromatic richness, which expresses splendid aromas of berries, strawberry and cherry. Juicy, fresh and easy to drink, it is perfect to drink throughout a meal, even in summer!
Biba Ardoak Tempranillo ‘Sustrai Berry’ from the artisanal reality of Bodegas Aristu is a bottle with a friendly and engaging spirit, featuring a juicy and fruity taste derived from the carbonic maceration of the grapes. The name of the label comes from a play on words between the Basque and English languages since the producer wanted to take the Basque expression “sustrai berri”, which means “new roots”, replacing it with the word “berry”, referring to the distinctly fruity character of this wine made exclusively from Tempranillo grapes, which are among the symbolic varieties of Spanish oenology.
The Tempranillo ‘Sustrai Berry’ Biba Ardoak from Bodegas Aristu is a pure Tempranillo from vines grown according to the principles of certified organic farming, thus without the use of herbicides and chemical pesticides. After the grape harvest, whole cluster fermentation takes place in stainless steel tanks with spontaneous alcoholic fermentation and maceration carbonic. Also in steel, complete malolactic fermentation is required and the wine rests for about 3 months before bottling. Throughout the entire processing, the mass undergoes no clarification or filtration operations, respecting the purest expression of the territory.
In the glass, the ‘Sustrai Berry’ Biba Ardoak Bodegas Aristu Tempranillo reveals a beautiful bright ruby red color. The olfactory panorama is defined by hints of berries, with strawberry standing out, surrounded by delicate sensations of rose and violet. Juicy, rich, and fruity on the palate, it has a soft tannic structure and good freshness on the finish that favors pairing with white meats such as lamb and rabbit, but also with medium-aged cheeses.
