ZIBIBBO SECCO 'TAIF' CANTINE FINA 2021 DESCRIPTION

Cantine Fina's Zibibbo Secco 'Taif' is a slightly aromatic white wine with a fresh, savoury profile, produced in the hinterland north of Marsala. It is made from Moscato d'Alessandria or Zibibbo grapes, which are usually dried and then vinified to make sweet wines, but these varieties are also proving to be very well suited to dry vinification to produce fragrant, fresh and fruity wines that are very pleasant to drink. The harmonious softness typical of the Moscato grape finds a perfect balance in the freshness and sapidity typical of the Marsala terroir. It is a well-balanced and expressive wine that goes very well with shellfish hors d'oeuvres, fish starters and first courses of seafood cuisine.

"Taif" Zibibbo Secco was born in the splendid territory of Contrada Bausa, where Cantine Fina is based. This is a family-run business that has had the merit of recovering an ancient baglio, a Sicilian estate, giving new impetus to viticulture in the beautiful area along the north coast of Marsala, not far from the local salt pans and the Natural Reserve of the Stagnone Islands. In little more than a decade, it has established itself as one of the most interesting wineries in western Sicily, thanks in part to the efforts to enhance the area's historical varieties production, to which some international vines have been added, which have adapted well to the area. The climate, warm and Mediterranean, is always mitigated by the iodine and saline breezes of the sea, which contribute to creating a unique habitat. The vineyards are managed under organic farming methods, in harmony with an unspoilt coastal environment and in keeping with the desire to produce genuine wines with the authentic fragrance and taste of the land of Sicily.

The white wine Zibibbo Secco "Taif" Cantine Fina is one of the symbols of the winery. It is produced from the white grape variety that has always been present on the western tip of the island. The choice of delicate dry vinification enhances its aromatic side, combined with an unmistakable and distinctive marine character. The vines are cultivated on hillsides, at an altitude of approximately 300 metres above sea level. Fermentation takes place in steel tanks. Before bottling, the wine matures in steel for several months. In the glass it is a luminous straw yellow with greenish reflections. The bouquet seduces with aromas of orange blossom, white flowers, citrus fruits, hints of aromatic herbs and notes of white fruit. On the palate, it has a warm, soft entry, with an enveloping fruitiness that stretches harmoniously towards a savoury, fresh finish, giving the sip a perfect balance.
