The Brut Tradition "Ivoire et Ebene" by Maison Aubry is a vintage Champagne that, thanks to extended ageing on the lees, offers the sensation of a bouquet characterized by refined elegance and complexity. It exudes fresh citrus aromas, hints of yellow fruits, and nuances of toasted dried fruits. This Champagne provides a rich and persistent palate, perfect for enjoying at the table during a special dinner, adding that distinctive touch of allure that only Champagnes can bring.

The Brut Tradition "Ivoire et Ebene" Champagne is produced by Maison Aubry in Jouy-Les-Reims, a small village in the northern part of the Montagne de Reims. Here, fifteen hectares of vineyards are divided into about sixty parcels, primarily cultivated with Pinot Noir, Pinot Meunier, Chardonnay, and Pinot Blanc. Additionally, ancient local grape varieties are on the verge of extinction, such as Arbanne, Petit Meslier, Frometeau, and Enfumé. The Ivoire et Ebène cuvée was created in 1982 using grapes from a plot planted with Chardonnay and Pinot Meunier. These are vinified separately in old used barrels. The finesse and elegance of Chardonnay combine with the fruity richness of Meunier, creating an unusual and unexpected harmony. Once the cuvée is assembled, the wine rests on its lees for at least 48 months before disgorgement.

The "Ivoire et Ebene" Cuvée is a Brut Vintage Champagne that aptly represents the style of Maison Aubry—rigorous, precise, and uncompromising in the absolute pursuit of grape quality, yet also creative and innovative in terms of blends. The original union of Chardonnay and Meunier yields an unconventional Champagne. Its colour is a light golden straw with a fine and persistent effervescence. The olfactory profile is intense, featuring floral scents, citrusy notes, ripe yellow fruit, toasted bread, and almonds. The palate has a generous breadth, with a soft and aromatically rich entry. The finish concludes with a sensation of great freshness.
