"Le Nombre d'Or Sablé" is a champagne blanc des blancs very elegant, with hints of floral and pleasant notes of bergamot and ginger and a sharp minerality. The word Sablé means that there is lower pressure of the bottle, so its consistency is very velvety, with a creamy perlage
"Le Nombre d'Or Sablé" by Aubry is a Champagne that harkens back to another era. It is classified as a Brut, Blanc des Blancs, reflecting the blend of grapes used, with a slight predominance of Chardonnay, complemented by two other indigenous varieties, Arbanne and Petit Meslier. "Sablé" is a registered term denoting this type of Champagne, obtained with lower pressure and resulting in a creamier mousse, thanks to the liqueur de tirage being less rich in sugars and saccharomyces yeast.
The Nombre d'Or, the finest vintages resting in Aubry's cellars since 1983, are meticulously selected to blend this pioneering Champagne. The final cuvée composition includes grapes from a single vineyard in Jouy-lès-Reims. The first fermentation occurs in stainless steel tanks, parcel by parcel. Once the cuvée is assembled, the second fermentation in the bottle is initiated following the traditional Champenoise method. Finally, the wine matures on the lees for 36 months. The sugar dosage is kept minimal to enhance its inherent characteristics.
Aubry's "Le Nombre d'Or Sablé" Champagne has a straw-yellow colour, with a light effervescence and a creamy mousse. The notes of bergamot, hedgerow, honey, white peach, quince, and candied orange peel are discernible on the nose. The palate is round and very fresh, displaying an original and delicate harmony. There's a presence of crisp fruit reminiscent of ripe pear. Certainly, this is an uncommon Champagne that is worth experiencing!
