ERBALUCE DI CALUSO ILARIA SALVETTI 2020 DESCRIPTION

Erbaluce di Caluso is produced by Ilaria Salvetti's winery. Although it was only founded in 2012, it can count on the experience of several generations who have passionately dedicated themselves to viticulture, particularly to the native white grape variety Erbaluce, a true ambassador of the Canavese territory, one of the most interesting areas of Piedmont. This is the most typical version, which best expresses the varietal characteristics of the grape, characterized by floral notes, rich fruity aromas and a clear freshness that makes the sip always pleasant and fragrant.

The white Erbaluce di Caluso is born in a young family-run winery in Canavese. Ilaria Salvetti's winery manages a 4-hectare estate and produces artisanal wines with great territorial identity. The Erbaluce vines are located within the municipal area of Caluso, on a moraine hill, at an altitude of 350 meters above sea level. The soils are rich in skeleton, characterized by the presence of pebbles, gravel and sand, left by the retreat of an ancient glacier that generated the entire Canavese area. The vineyards are managed under organic farming practices, using only sulfur and copper. Harvesting takes place manually in the first decade of September. The grapes are gently pressed, and the must ferments spontaneously with indigenous yeasts in temperature-controlled steel tanks. Before bottling, the wine matures for six months on fine lees, acquiring structure and aromatic complexity.

Ilaria Salvetti's Erbaluce di Caluso wine is a white of great expressive finesse, expressing remarkable taste balance. In the glass, it appears a light straw yellow color with bright reflections. Elegant and refined, it expresses a bouquet characterized by delicate scents of hawthorn, jasmine, and orange blossom, white pulp fruit aromas, green apple, peach, Williams pear, hints of citrus peel, and nuances of aromatic herbs. On the palate, it has a soft and fragrant fruit, with a harmonious, slightly aromatic, rich, and crunchy sip, supported by lively freshness, crossed by a clear salty trail. It is perfect to pair with seafood dishes or risottos or pasta with vegetables.
