The 'PG Rosa' from the Gorizia Ferlat winery is a distinctive and intriguing Pinot Grigio vinified through a few days of maceration on the skins. The acronym 'PG' in fact stands for Pinot Grigio, a variety originating in France characterised by the grey colour of the berries which, when vinified through contact between the fermenting must and the skins, give rise to wines with a unique and fascinating coppery hue. This grape variety originated from a gem mutation of Pinot Noir which seems to have originated in Burgundy.
Ferlat 'PG Rosa' is made from only Pinot Grigio grapes grown according to organic farming principles. Manual harvesting is followed by destemming and crushing of the grapes, which are then mellowed in concrete tanks for alcoholic fermentation. The fermenting must, divided into three parts, remains in contact with the skins for three different periods: one part for 48 hours, another part for 4 days and the last one macerates on the skins for 7 days. The masses are then assembled so as to complete alcoholic fermentation together, trying to avoid malolactic fermentation in order to safeguard the freshness of the finished wine. Maturation takes place in the same containers on the fine lees for a few months before bottling.
Ferlat Pinot Grigio 'PG Rosa' has a coppery pink colour with salmon-coloured highlights. The nose evokes fragrances of pomegranate, cherry, black cherry and aromatic herbs, combined with pleasant floral notes. In the mouth it is fresh, delicate and drinkable, not lacking in softness and complexity, with light tannins and an incisive savoury vein. A refined interpretation "in pink" of Pinot Grigio that goes well with seafood dishes of a certain structure, such as salmon fillet in crust.
