The Trento Spumante Brut Riserva "Cuvee dell'Abate" represents an expressive summit in terms of finesse. It is a thirty bubble that rises in complexity thanks to a long aging on the lees. Made for refined palates and special occasions, this Trento DOC is the flagship label of the Abate Nero winery. It is located in Trento, the beating heart of the sparkling wine of the Dolomites, and was born from the desire and competence of the families Lunelli and de Castel Terlago. The result, over the years, is a recognizable signature that identifies a style, as can be seen wonderfully among the chains of bubbles that run through every glass of this sparkling house.
The "Cuvee dell'Abate" Brut Riserva di Abate Nero is obtained from a base wine made from 100% Chardonnay grapes. The vineyards are affected by the influence of the Alps and the soil profiles of the surrounding soils, capable of giving their grapes a multitude of characteristics ranging from body to finesse, from aromatic precision to nerbo. Following the harvest, the grapes destined to become the "Cuvee dell'Abate" are softly pressed and transformed into must. After the vinification, carried out only in steel, we proceed with the sparkling phase. After the refermentation in the bottle, it is expected to stop on the lees for 80 months. Disgorgement and a further period of rest in the cellar complete the production process.
Abate Nero Riserva Brut "Cuvee dell'Abate" presents a straw yellow color embellished with golden reflections and an abundant and persistent perlage. The olfactory impression ranges in a complexity not too intense but played on finesse, articulated in delicate floral notes of lime and hawthorn, ripe fruit, dried fruit, honey, placed on a background of pastry and toasted traces. In the mouth it affirms in a decisive way, showing a full body and an elegant fresh sapid intertwining. In closing, citrus and baking notes emerge. It is a Classic Method with great quality value.
