The Bolgheri Rosso "Volpolo" is truly a delightful surprise. That's because it's challenging to establish the names of historic labels in this area of Maremma. However, Podere Sapaio, a winery born at the turn of the millennium in 1999, is doing everything it can to establish itself in the ranks of Bolgheri wines. This is thanks in part to the work of Carlo Ferrini, an internationally renowned winemaker who oversees production. We're facing a multi-award-winning label with a harmonious character and good longevity, surprising for its elegance and easy drinking. It deserves more than just a taste: well done!
This "Volpolo" Bolgheri Rosso originates from an international-style blend, where Cabernet Sauvignon plays the leading role. It makes up 70% of the final blend, accompanied by equal Merlot and Petit Verdot percentages. After the strictly manual harvest, the grapes are brought in crates to the Podere Sapaio cellar dedicated to vinification, where they are destemmed. The must obtained from pressing the berries ferments at a controlled temperature in stainless steel tanks, undergoing a long maceration on the skins. The maturation lasts 14 months and takes place in both French barriques and tonneaux.
The Bolgheri Rosso "Volpolo" reveals the classic ruby colour upon visual examination. On the nose, there are sensations reminiscent of small wild berries, enriched with spicier notes that peek through on the finish. On the palate, it is of good body, broad and captivating, with a sip that brings out savoury and fresh undertones, making the drinking experience a true delight. It's a label with which the Podere Sapaio winery, one of the most interesting wine-producing realities in the Bolgheri region born in the last twenty years, has gained the approval of both the national and international industry critics.
