The Cotes de Bordeaux Rouge by Jean Paul Deville originates in the Champagne region and stands as an excellent representation of the renowned land of great French wines. The Maison was founded in 1968 by Jean Paul Deville, a son of the soil, as his family had managed the lands near Verzy for five generations. Initially, his small production exclusively comprised high-quality Champagne, but over time, the production expanded and diversified, thanks in part to the involvement of Marie-Alice, Jean Paul's daughter, who decided to carry on her father's tradition while projecting it into the future.
The Merlot, Cabernet Sauvignon, and Cabernet Franc grapes of Jean Paul Deville's Cotes de Bordeaux Rouge grow on healthy, flourishing vines. The vineyard work respects the natural growth and development phases of the plants and raw materials, preserving the surrounding ecosystem to deliver unexpected aromas and flavours in the final product. Synthetic chemicals, pesticides, and herbicides are entirely banned in favour of a simple farming approach rooted in traditional practices. Harvesting is done manually, followed by a selection of the best bunches that will be brought to the cellar. In the cellar, there is an alcoholic fermentation and a 24-day maceration on the skins in steel. It then undergoes several months of ageing in wood.
