As its name indicates, it is the Maison's entry label to the world, a true calling card, allowing one to get to know its classic style, the result of a balanced blend of the three most cultivated grape varieties in the region. The result of painstaking work in the vineyard and a long period of ageing sur lattes, it offers an intense and aromatically complex sip, but one that is always traversed by a clear vein of mineral freshness.
The Extra Brut 'Initiale' is an artisanal Champagne made by a Recoltant Manipulant following the ancient savoir-faire of the region. The Maison Louis Huot was founded after World War II and today owns a seven-hectare estate located between Côte de Blancs and the Vallée de la Marne. The property is divided into many small parcels cultivated in the vocated areas of the communal territories of Saint Martin d'Ablois, Vinay, Chavot and Monthelon. Agronomic management is inspired by the principles of integrated pest management, seeking to reduce treatments to a minimum in order to obtain healthy, genuine grapes. The cuvée is composed of Chardonnay, Pinot Noir and Meunier grapes, which are gently pressed. At the end of fermentation, the base wines rest for a few months before being blended in the final blend, which also includes a percentage of reserve wines from previous vintages, giving the cuvée its expressive harmony. The second fermentation takes place in the bottle according to the Champenoise Method, with an ageing on the lees for 60 months
"Initiale" from the Maison Louis Huot is an Extra Brut Champagne with a clear and essential profile, dry and vertical, with a remarkable depth of expression. It is perfect to be enjoyed with hors d'oeuvres, seafood first courses or white meat fish dishes. To the eye it flaunts a luminous straw yellow with brilliant golden reflections, enhanced by a very fine perlage of delicate persistence. The bouquet is refined, with aromas of orange blossom and white flowers, citrus peel, golden apple, peach, cartaro melon, hints of bread crust, small pastries and notes of toasted nuts.
