"Aldo Conterno's "Il Favot" is a pure Nebbiolo, a grape variety that the winery cultivates in different plots within the Bussia cru in Monforte d'Alba. Among the rows, maximum respect is shown for the environment and no fertilizers or herbicides are used, allowing only copper and sulfur. The must obtained by pressing the best grapes ferments in stainless steel containers spontaneously, thanks to the presence of indigenous yeasts; maceration in contact with the skins lasts 6-8 days. Maturation takes place first for six months in steel, and then the wine is transferred to new barriques for a total of 18 months.
Aldo Conterno's Nebbiolo "Il Favot" is a red wine that develops with a classically deep ruby color. The bouquet of notes surrounding the nose develops with concentrated and warm aromas, from which emerge hints of jammy fruit and sensations of dried flowers, enriched by nuances of aromatic herbs. On the palate, it is full-bodied, elegant and refined, and presents a swathing and ample sip in which the workmanship of the tannins is appreciated. A very versatile red in the kitchen, easy to pair with meat-stuffed pastas or with game dishes as well as with classic Piedmontese aged cheese.
