The vineyards of Cantine San Marzano are located on soils consisting of residual red earth, rich in iron oxides, with a limestone substrate and rare rocky outcrops. The high temperatures, low rainfall, and high temperature range determine the high quality of the grapes.
The grapes that give rise to the Primitivo di Manduria DOP Riserva "Anniversario 62" are manually harvested in the second half of September, when they are fully mature. The grapes are crushed and destemmed and left to macerate at a low temperature for 24-48 hours. This is followed by thermo-controlled maceration and alcoholic fermentation with indigenous yeasts for about 10 days. The 18-month aging in oak barrels softens the wine and gives it great structure, making it long-lasting.
