TIMORASSO 'RUGIADA DEL MATTINO' I CARPINI 2021 DESCRIPTION

"Rugiada del Mattino" is a Timorasso that combines technique and tradition into one, giving the right emphasis to a Piedmontese grape variety that in recent years is gaining considerable interest, not only at a regional level. Made by the I Carpini winery, a solid production reality located in the Colli Tortonesi area that is characterized by the use of organic-holistic practices, this is a bottle that is striking for its pleasantly refreshing and mineral drinkability, ideal to accompany various recipes of the Italian cuisine, from raw fish to white meat.

Timorasso "Rugiada del Mattino" is made by the i Carpini winery from grapes grown in a single vineyard, named Eleonora, composed of a subsoil of clay and limestone, facing southeast. The grapes, after being harvested strictly by hand, are softly pressed and then spontaneously fermented in steel, thanks to the exclusive use of indigenous yeasts. Refinement is carried out only in steel; during the bottling stage, no clarification or filtration is carried out. Once in glass, the wine is left to age for about 8 months before being released on the market, developing a slight hydrocarbon minerality that is destined to evolve over time in the bottle.

I Carpini's "Rugiada del Mattino" white wine is a Timorasso that presents itself to the eye with an intense straw yellow color. The nose is struck by mineral aromas, which alternate with more fruity and floral scents. On the palate it is light-bodied, slender and agile, distinguished by a sip whose calling card is the combination of freshness and minerality. A label to choose not only to increase one's knowledge on wine, with an intriguing and satisfying variety, but also for its extreme culinary versatility.
